Sweet summertime is finally here in Chicagoland! We've been looking forward to this time of year for months... walks at sunset, flowers in full bloom, and of course cookouts with friends and family! There is nothing better than sharing a good meal with the people you love.


We have included SO MANY new recipes in this newsletter; you are bound to find a few new favorites from our list below. From our light and flaky salmon burgers to our antioxidant-rich and cooling smoothies, these recipes will help you celebrate summer in style! Cheers!

The MIND Diet is a brain-health diet. It focuses on healthy foods to keep your brain functioning at tip-top shape. The MIND diet was developed to prevent cognitive decline that can happen with aging; however, this nutrition plan is perfect for anyone who desires to keep their mind sharp. From Your Kitchen to Ours: June Edition

This month's submission comes from our dietetic intern, Sean. Sean is a student at UIC and has been working with Beyond Hunger to finesse our home delivery and pedestrian pantry programs. He is also the father of three young boys!

Shepherd's Pie

Sean says, "A challenge in today’s busy world is making a delicious, nutritious meal that fills everyone up and still leaves some for leftovers. This recipe can be made quickly at the end of a long day, or it can be made in advance. Simply store the prepped recipe in the refrigerator and put in the oven when you are ready!". This Shepherd's Pie uses many familiar pantry ingredients, including our potato flakes, low sodium mixed vegetables, and ground turkey. Next time you need to feed a crowd, give this recipe a try!

It's hot outside! Cool down and boost your antioxidant intake with these cooling smoothie recipes.    

Berries are a great source of antioxidants that increase the health of our brains and our body's many other systems. Nuts and seeds are rich in healthy fats and Vitamin E, which protects our cells from everyday damage. Dark leafy greens are packed with multiple vitamins, like Vitamin K, and can also help keep your blood pressure in check. Give these three smoothie recipes a try, and they'll keep you cool and healthy throughout the summer!
