This pudding is deliciously smooth with a bit of a crunch and is filled with fiber, protein, and healthy fats! Ingredients
2 Tbsp Chia seeds
1/2 C light coconut milk or milk of choice
1/2 tsp maple syrup
dash of cinnamon
1/3 C mixed berries
chopped almonds or walnuts (optional)
granola (optional)
coconut flakes (optional)
Instructions
  1. In an airtight container or jar, combine the chia seeds, milk, maple syrup, cinnamon and berries, and stir well.
  2. Let mixture chill in the refrigerator for 2-3 hours, then stir again to loosen any clumps.
  3. Chill for 8 hours or overnight and enjoy cold with any additional toppings.
