Tofu is a great source of plant-based protein; it takes on any flavor that is added to it. Cornstarch is used in this recipe to achieve the ultimate crispy outer layer. Add this to a stir-fry, noodle dish, or grain bowl, or eat it as an appetizer!

Ingredients
1 lb extra firm tofu
1 Tbsp vegetable or olive oil
½ tsp salt
½ tsp pepper
1 tsp cumin
1 tsp paprika
1 tsp za'atar (optional*)
1 tsp garlic powder
1 tsp onion powder
1 Tbsp cornstarch
Instructions

1. Preheat the oven to 400 degrees and line a large, rimmed baking sheet with parchment paper to prevent the tofu from sticking.

2. Drain the tofu and use your palms to gently squeeze some of the water out.

2. Wrap your extra firm tofu in a few layers of paper towel. Set something heavy on top, like a cast iron skillet, and let sit for 15 minutes to press out any extra moisture. 

4. Transfer the pressed tofu to a cutting board and cut into 2" cubes. Add tofu cubes to a medium bowl, drizzle with oil, and add all spices. Toss to combine.

5. Sprinkle the cornstarch over the tofu and toss until the starch has evenly coated the tofu and no powdery spots remain.

6. Arrange the seasoned tofu on the lined baking sheet in an even layer. Bake for 25 minutes, tossing the tofu halfway, until the tofu is deeply golden.

Notes

Chef's Note: Za'atar is a common spice in the middle east and Mediterranean regions. This spice contains toasted sesame, sumac, thyme, oregano, cumin, and salt. You can find this spice at most supermarkets in the spice aisle.
