Quick, easy, and perfect for meal prep or a family meal, this savory bowl brings bold egg roll flavor with no rolling required. Customize it with your favorite toppings like sesame seeds, crushed peanuts, cilantro, green onions, or scrambled egg for the ultimate flavor boost.

Ingredients
1 Tbsp vegetable or olive oil
1 lb lean ground pork
1 16 oz bag of coleslaw mix
3 Tbsp water
3 Tbsp low sodium soy sauce
1 1/2 tsp ground ginger
2 tsp rice vinegar (or lime juice)
3 C brown rice
salt and pepper to taste
Optional toppings (Sriracha, Tabasco, or chili flakes for heat)
Instructions
  1. Cook brown rice according to package.
  2. While rice is cooking, heat vegetable or olive oil in a large skillet or wok over medium high heat until hot. Add meat using wooden spoon to gently break it into smaller pieces.
  3. Cook meat until browned with no pink remaining (about 5-6 minutes). Turn off the heat, drain excess fat if needed, and return the skillet to medium heat.
  4. Add the coleslaw into the meat, add 3 T water and cook the coleslaw until it starts to wilt but is still crisp. This will take about 4-5 minutes.
  5. Add soy sauce, ginger, salt and pepper, cooking for another minute.
  6. Add rice vinegar or lime juice, taste and adjust seasonings.
  7. Once rice is ready, serve meat over rice with toppings of your choice and enjoy!
Notes

Chef's Note: Swap pork for beef, turkey, or chicken! However, make sure to choose lean options and fully drain excess fat as extra grease will prevent the sauce from coming together.
