This one pan meal is one of our most requested recipes—perfect for the whole family.  Easy clean up. Quick to prepare.

Ingredients
1 Tbsp canola oil
½ C onion (diced)
1 lb lean ground turkey ((or beef))
1 can black beans (15oz, drained, rinseed)
1 can corn (15oz, drained, rinsed)
1 C picante sauce (mild)
1 tsp chili powder
1 C cooked brown rice (or cooked white rice)
1 C shredded monterey jack (or cheddar cheese)
Instructions

1.  In a large skillet or medium pot with a lid, heat oil over medium-high heat.

2. Add onion and ground meat and cook until browned.

3. Add beans, the next 5 ingredients and bring to a simmer.

4. Cook for 10 minutes. Remove from heat, add the cooked rice and mix well. Sprinkle with cheese and serve.
