Ingredients
3 Tbsp all purpose flour
1 2/3 C granulated sugar
1 C sweet potatoes (cooked, mashed)
3/4 C evaporated milk
1/2 C butter (room temperature)
1/4 C light corn syrup
2 eggs (room temperature)
1/4 tsp ground nutmeg
1 pn salt
1 pie shell (9", unbaked)
Instructions

Preheat the oven to 350 degrees F.
In a mixing bowl, stir together the flour and sugar. Add the sweet potatoes, evaporated milk, butter, corn syrup, eggs, nutmeg and salt and mix on medium speed with an electric mixer.
Pour the sweet potato filling into the unbaked pie shell. Place in the oven and bake at 350 degrees F for 55-60 minutes or until the pie is set in the middle.
Remove from the oven and let cool on a wire rack then chill completely.
