italian inspired shrimp sitir fry

You may have enjoyed Asian-inspired shrimp stir fry in the past. But have you tried an Italian-inspired shrimp stir fry? Loaded with veggies, basil, and salty Parmesan cheese, this dish is nutritious and filling. Serve it over rice or pasta OR eat it as-is for a lower carb dinner!

Ingredients
1 Tbsp olive oil
1 Tbsp butter
2 lb shrimp (peeled and deveined, tail on)
4 clv Garlic, minced
2 zucchini (large, diced)
2 C corn
1 ½ C cherry tomatoes
1 bn fresh basil
¼ C Parmesan cheese (shredded)
1 lemon (juiced)
Instructions

1. In a large skillet, heat oil and butter over medium heat. Once melted, sauté shrimp and garlic until shrimp are opaque, about 3 minutes. Remove to a plate.

2. Increase heat to high, then add zucchini. Sauté for 2 minutes, then move to side of skillet. Next add corn and sauté for another minute, then move to side of skillet with zucchini. Add tomatoes and sauté for an additional minute. Stir to combine veggies and add salt and pepper to taste.

3. Add shrimp back to skillet and stir to combine thoroughly. Heat about 1 minute and remove to a large platter/plate.

4. Sprinkle basil and Parmesan over the shrimp mixture, then squirt lemon juice over mixture, as well.

5. Serve with rice, pasta, or on its own (for a lower carb meal). Enjoy!
