Oregano is a popular and easy-to-grow herb. In this pesto recipe, oregano is used in place of the more commonly used herb, basil. You will find this pesto bursting with freshness; it can be used to top fish or chicken, as a sandwich spread, or mixed into warm pasta. Enjoy!

Ingredients
¼ C olive oil
2 green onions
1 clv garlic
1 Tbsp walnuts
1 ½ tsp fresh lemon juice
½ lemon zest
C Parmesan cheese
1 C fresh parsley (loosely packed)
1 C fresh oregano
Salt, as needed
pepper as needed
red pepper flakes (As needed)
Instructions

Combine all ingredients in a blender. Blend on low/medium setting until pesto is smooth. If you prefer a pesto that is a bit runnier, add more olive oil.

Notes

Chef’s Note: If you do not have fresh oregano leaves available, you can use fresh basil, parsley, or mint instead. Each herb will offer its unique flavor profile to the dish.
