Ingredients
2 Tbsp olive oil
1 clv garlic (peeled and minced)
15 oz canned cannellini beans (low sodium)
1/3 C vegetable broth (low sodium)
1 Tbsp lemon juice
lemon zest from half of a lemon
1/4 tsp salt
Freshly ground black pepper to taste
1 Tbsp Chopped fresh parsley leaves
Instructions
  1. Heat oil in pan over medium high, add garlic and sauté until fragrant, about 30 seconds.
  2. Add beans, broth, lemon juice and lemon zest.
  3. Simmer for 2 minutes, then use a fork or potato masher to mash.
  4. Season to taste with salt and pepper and add parsley.
Notes

Recipe notes: Add one tablespoon of chopped fresh herbs like rosemary, thyme, or basil for extra flavor.
