This no-fuss baked chicken and potato dinner is juicy, cheesy, and full of flavor! Ingredients
4 red potatoes (medium-large)
1 Tbsp minced garlic
1 Tbsp olive oil
1/8 tsp salt
1/8 tsp black pepper
1 1/2 lb boneless, skinless chicken breasts
1 C shredded mozzarella cheese
1 Tbsp chopped parsley (optional for garnish)
Instructions
  1. Preheat oven to 425°F.
  2. Dice potatoes into cubes, approximately ¾ inch in size, placing into a large bowl.
  3. Add garlic, olive oil, salt, and pepper. Toss to coat.
  4. Spray a large baking dish (9x13 in) with non stick spray and spread the potato mixture evenly in the dish. Bake for 15 minutes.
  5. Remove baking dish from the oven and nestle the chicken in between the potatoes.
  6. Bake chicken with potatoes for another 20-25 minutes, until the chicken is cooked and potatoes are browned.
  7. Sprinkle the mozzarella cheese on top, baking for another few more minutes to melt it.
  8. When serving, sprinkle with chopped parley, if desired, and enjoy!
