This is a great meal for vegetarians and meat-eaters alike! It’s loaded with veggies, like broccoli, and has the sharp flavor of Parmesan cheese. Enjoy this family-friendly dish any day of the week!

Ingredients
8 oz uncooked penne pasta
2 Tbsp olive oil
2 clv Garlic, minced
1 lb fresh or frozen broccoli florets
1 can garbanzo beans, drained and rinsedd
1 medium bell pepper, thinly sliced
½ tsp salt
¼ C Parmesan cheese, shredded or grated
Black pepper, to taste
Instructions

1. Cook pasta according to the package instructions. Drain and set aside once cooked.

2. While pasta is cooking, heat oil over medium heat in a large sauté pan. Add garlic and sauté until fragrant, about 1 minute.

3. Add the broccoli, beans, bell pepper, salt, and 3 Tbsp of water. Cover and allow to steam for about 5 minutes, until the broccoli is warm and the bell pepper is softened.

4. Toss the drained pasta with the veggies. Stir in black pepper and Parmesan cheese. Serve warm.
