Ingredients
3/4 C water
1/4 C old-fashioned rolled oats
1 tsp olive oil
1/4 C diced bell pepper (any color)
2 Tbsp finely chopped onions
1/8 tsp salt
1/8 tsp black pepper
1 egg
Instructions
- Add water to a small saucepan and bring to a boil.
- Add oatmeal and stir. Reduce heat and let it cook for 3 minutes until all liquid is absorbed.
- While oatmeal is cooking, heat a small nonstick pan with ½ tsp olive oil over medium to high heat. Add bell pepper and onions, cooking for 5 to 10 minutes until soft.
- When oatmeal is ready, stir in cheese, salt and pepper. Top with veggies.
- Add the remaining ½ teaspoon of oil and fry the egg. Cook until desired doneness and place over oatmeal.
- Serve with any additional toppings of your choosing and enjoy!
Notes
Chef’s Note: Try adding some tasty toppings like avocados, oregano, or sliced green onions! You could also try different veggies like mushrooms, spinach or tomatoes.
