1 red bell pepper (Sliced)
1 orange bell pepper (Sliced)
1 yellow bell pepper (Sliced)
1 green bell pepper (Sliced)
2 Tbsp olive oil
¼ tsp salt
½ tsp ground black pepper
1 lemon, juiced
2 Tbsp Flat leaf parsley (Chopped)

1. Preheat the oven to 425 degrees Fahrenheit.

2. Toss peppers together in a large bowl and add oil, salt, and pepper. Toss to combine and spread onto a large baking sheet in a single layer.

3. Roast until tender, 20-25 minutes.

4. Transfer veggies to a serving dish. Squeeze lemon juice over peppers and garnish with parsley.
