Ingredients
2 qt water
1 tsp salt
1 lb whole wheat spaghetti
¼ C olive oil
3 clv garlic
3 fresh rosemary
1 C Parmesan cheese
1 tsp lemon zest
½ tsp ground black pepper
Instructions

1. Bring water and 1 tsp of salt to a boil. Add pasta to boiling water and cook for 1 minute less than the directions on the package suggest, around 7 minutes. Reserve 1 ½ c pasta water, then drain the pasta thoroughly.

2. Meanwhile, in a large skillet over medium heat, warm the olive oil. Then add the garlic and rosemary and cook until fragrant, around 2 minutes. Transfer the rosemary to a plate lined with paper towel to drain. Remove garlic from the oil with a slotted spoon and discard.

3. Add the drained pasta to the skillet and sprinkle the cheese, lemon zest, and pepper onto the pasta. Add ½ c reserved pasta water to the skillet and begin to toss the ingredients together. This will make a light cheese sauce for the pasta. Add more reserved pasta water, as needed, to create a creamy sauce. Toss ingredients until thoroughly combined and pasta is covered in the cheese sauce.

4. Season with crispy rosemary needles, taste, and adjust seasonings as desired. Serve warm.
