As the seasons are changing, enjoy this comfort meal of turkey chili smothered sweet potatoes this fall. This one pot dish is perfect for a quick meal to warm you up.

Ingredients
¼ lb lean ground beef
½ Tbsp olive oil
½ yellow onion (Diced)
1 clv Garlic, minced
7 oz canned black beans
7 oz diced tomatoes
1 ½ oz tomato paste
½ Tbsp chili powder
¼ tsp dried oregano
½ tsp dried cumin
½ C water
¼ tsp salt
2 sweet potatoes
¼ C cheddar cheese, shredded
Instructions

1. Add ground turkey and olive oil to a large pot and sauté over medium heat. Dice the yellow onion and mince the garlic while the turkey cooks. Add the onions to the pot and continue to sauté until the onions are soft. Add garlic and cook for one minute longer.

2. Drain the beans and add them to the pot along with the diced tomatoes, tomato paste, chili powder, oregano, cumin, and water. Stir to combine.

3. Allow chili to come up to a slow boil and reduce the heat and let simmer for 10 min. Add salt.

4. While the mixture is simmering, wash the sweet potatoes and wrap them in a wet paper towel. Pierce each side of the potatoes with a fork a few times. Place the potatoes in the microwave for 5 min. Then flip them over and continue to microwave another 5 minutes, or until they are tender.

5. Cut the potatoes in half and spoon ¾ cup of the turkey mixture over each potato and top with cheddar cheese.
