Veggie Flatbread Pizza

This flatbread is a simple, satisfying way to get in extra veggies. A lighter take on pizza—crisp, flavorful, and loaded with veggies. Fewer calories than a traditional slice, it makes a great quick lunch or dinner! Customize it with your favorite toppings and enjoy straight from the oven.

Ingredients
1 whole grain flatbread (pita or naan)
Cooking spray
2 Tbsp marinara or pizza sauce
3/4 C vegetables (mushroom, bell peppers, spinach, sliced black olives, etc.)
2 Tbsp shredded mozzarella (low fat and low sodium)
Italian seasoning, crushed red peppers, grated parmesan (optional toppings)
Instructions

 

  1. Preheat oven to 425°F.
  2. Prep the flatbread: Place it on a parchment and lightly spray the flatbread itself with olive oil spray.
  3. Bake the flatbread for 5 minutes before adding any toppings to help it crisp up.
  4. Remove flatbread from oven. Spread with marinara, then layer on chosen veggies and shredded mozzarella.
  5. Return to oven for 8–10 minutes, or until edges are golden and crispy and the cheese is melted and brown in spots. Start checking around 7 minutes.
  6. Slice with a pizza cutter and top with Italian seasoning, red pepper flakes, and grated Parmesan if desired. Enjoy immediately!
