Ingredients
1 whole grain flatbread (pita or naan)
Cooking spray
2 Tbsp marinara or pizza sauce
3/4 C vegetables (mushroom, bell peppers, spinach, sliced black olives, etc.)
2 Tbsp shredded mozzarella (low fat and low sodium)
Italian seasoning, crushed red peppers, grated parmesan (optional toppings)
Instructions
- Preheat oven to 425°F.
- Prep the flatbread: Place it on a parchment and lightly spray the flatbread itself with olive oil spray.
- Bake the flatbread for 5 minutes before adding any toppings to help it crisp up.
- Remove flatbread from oven. Spread with marinara, then layer on chosen veggies and shredded mozzarella.
- Return to oven for 8–10 minutes, or until edges are golden and crispy and the cheese is melted and brown in spots. Start checking around 7 minutes.
- Slice with a pizza cutter and top with Italian seasoning, red pepper flakes, and grated Parmesan if desired. Enjoy immediately!
