This avocado fusilli pasta combines fresh ingredients with a creamy avocado sauce for a simple and flavorful meal. It’s an easy way to enjoy vegetables, healthy fats, and protein in a dish that comes together quickly.

Ingredients
2 1/2 C fusilli pasta (dried)
2 clv garlic
7 C baby spinach (tightly packed)
2 small avocados (halved)
1 Tbsp olive oil
1/4 C dry roasted almonds (chopped)
1/4 C roasted cashews (chopped)
1 bn corriander (chopped)
2 limes
1/3 C feta cheese
Instructions

1. Boil salted water in a large pot and cook the pasta. 
2. Combine garlic, spinach, and avocado in a food processor or blender.  Add a drizzle of oil and a splash of the pasta cooking water and pulse until smooth. 
3. Place the chopped cashews, almonds, and coriander in a bowl. Juice in 1 lime and drizzle with oil. 
4. Drain the pasta, saving a cup of the cooking water, and place it back into the pan, adding a couple of splashes of the water. Pour over the avocado sauce and sprinkle over the desired amount of nut dressing and crumbled feta cheese. 
5. Serve with lime wedges. 

Notes

Substitute your favorite shape of pasta for the fusili
For added fiber, choose whole wheat pasta
