This recipe is nice and tangy. It combines the best of two flavors… blueberries and barbeque, and they work together perfectly!

Ingredients
1 Tbsp olive oil
½ C Onion, diced
2 C fresh blueberries
¼ C ketchup
¼ C balsamic vinegar
¼ C brown sugar
½ tsp salt (Divided)
6 boneless, skinless chicken breasts (6 oz)
Instructions

1. Preheat oven to 375o .

2. Heat olive oil in a medium saucepan over medium heat. Add diced onion, stirring occasionally, until translucent. Add blueberries, ketchup, vinegar, brown sugar, and ¼ teaspoon salt. Stir to combine. Bring to a simmer and allow to cook at a simmer for 4 minutes.

3. While the sauce simmers, place chicken breasts on a rimmed baking sheet or in a large baking dish. Sprinkle remaining salt over chicken breasts, then place in the oven. Bake chicken for approximately 20-30 minutes until internal temperature reads 165o .

4. Once the sauce has simmered, pour it into a blender and blend until smooth. Be cautious of hot steam during the blending process. Reserve ½ cup sauce in a bowl for serving.

5. Once the chicken is fully cooked, move the breasts to a large sauté pan. Pour the remaining blueberry BBQ sauce from the blender into the pan, on top of the chicken. Cook for 1-2 minutes, so the sauce and chicken are both warm.

6. Serve with reserved blueberry BBQ sauce while warm. Enjoy alongside rice and your favorite vegetable for a full meal.
