1 green bell pepper (medium)
1 lb lean ground beef (90% Lean)
3 clv garlic
2 Tbsp chili powder
2 tsp ground cumin
1 tsp dried oregano
1/2 tsp kosher salt

Instructions
- Position the oven rack in upper third of oven.
- Heat 1 tablespoon oil in a large broiler safe skillet over medium heat. Add chopped onion and bell pepper then sauté about 5 minutes or until vegetables are soft. Add ground meat and brown, using a wooden spoon to break up large pieces, about 10 minutes. Stir in the garlic, chili powder, cumin, oregano, salt, and chipotle and cook about 1-2 minutes until fragrant. Add cauliflower, tomatoes and broth. Bring to a simmer until liquid is reduced and cauliflower is tender. Remove from heat.
- Sprinkle cheese over beef/cauliflower mixture and top with the jalapeños, if using.
- Broil until cheese is melted and browned in spots, about 2-3 minutes. Let cool and enjoy with tortilla chips or over rice.
Notes
