This Greek yogurt tuna salad is light and creamy, with protein-rich tuna and Greek yogurt helping you reach your protein goals. A filling meal that is easy to whip up and great for any occasion.

Ingredients
1/4 C plain Greek yogurt (2% fat)
1 tsp Dijon mustard
juice of 1/2 lemon
1 Tbsp extra virgin olive oil
1/8 tsp salt
1/8 tsp ground black pepper
6 oz solid white tuna in water (canned or in pouch )
1 stalk celery (finely diced)
1 Tbsp fresh chives, chopped
1 C loosely pack microgreens* (like basil or radish)
Instructions

1. In a small bowl, combine the yogurt, Dijon mustard, oil, salt, and pepper. Once combined, set aside.
2. If using canned tuna, drain the excess water and place the tuna in a medium bowl. If using a pouch, just add the tuna to the bowl.
3. In the same medium bowl, combine the celery and chives. Once combined, add the yogurt mixture to the medium bowl with the tuna and give it a mix. 
4. Cover and refrigerate until ready to use.

Notes

*Use additional chopped vegetables or herbs if fresh microgreens are not available. For example, cut radishes or chopped basil can add additional flavor.

Spread this salad over a slice of whole-wheat bread or in a bed of mixed greens. 
Use chopped onions and shallots as a substitute for chives.
This recipe can also be used to make chicken salad. Just replace the tuna with leftover rotisserie chicken.
