Ingredients
1 C boiling water
1/2 C uncooked bulgur
2 can chickpeas (15 oz each, drained and rinsed)
1 1/2 Tbsp canola oil (or avocado oil)
2 C carrots (finely chopped)
4 C kale (finely chopped, lacinato kale preferred)
1/2 C shallot (sliced vertically)
1/2 C Fresh parsley, chopped
3/4 tsp kosher salt (divided)
1/2 tsp black pepper
1/2 avocado
2 Tbsp extra virgin olive oil
1 Tbsp lemon juice
1 Tbsp water
1 Tbsp tahini (well-stirred)
1 clv garlic
1/4 tsp ground turmeric
Instructions

1. Combine boiling water and bulgur in a medium bowl. Let stand for 10 minutes. Drain well.
2. Pat chickpeas dry with paper towels. Heat canola/avocado oil in a large skillet over high heat. Add chickpeas and carrots. Cook, stirring occasionally, until chickpeas are browned (~6 minutes). Add kale; cover and cook until kale is slightly wilted and carrot is tender (~2 minutes). Add chickpea mixture, shallots, parsley, ½ tsp salt and pepper to bulgur mixture; toss.
3. Place avocado, olive oil, lemon juice, 1 tbsp water, tahini, garlic, turmeric, and remaining ¼ tsp salt in a food processor or blender. Process or blend until smooth. Spoon bulgur mixture into bowls and drizzle with avocado mixture.

Notes

Replace the bulgur wheat with any grain (rice, quinoa, cracked wheat)
Replace or add any in-season or available vegetables (corn, squash, beets, carrots)
Add an additional protein source (beans, chicken, turkey, beef) if desired
Yellow or red onions are a budget-friendly swap for shallots
