Ingredients
1 15-oz container part skim ricotta
2 Tbsp fresh thyme (chopped + more for garnish)
1 tsp minced shallot ( or 3 Tbsp minced chives)
1 Tbsp grated lemon zest
1/4 C lemon juice
1 tsp ground black pepper
1/4 tsp salt
2 Tbsp extra virgin olive oil
Instructions

1. Combine 1 container of ricotta, 2 tablespoons of thyme, 1 tablespoon shallot (or 3 tablespoons chives), 1 tablespoon lemon zest, ¼ cup lemon juice, 1 teaspoon pepper, and ¼ teaspoon salt in a food processor. Puree until smooth. 
2. Transfer to a serving bowl; swirl the top with the back of a spoon.
3. Drizzle with 2 teaspoons of oil. Garnish with additional thyme, if desired. 

Notes

Recipe Notes: 
Blender can be used instead of food processor.
If making ahead of time, cover and refrigerate for up to 1 day. 
Oil can be excluded as garnish.
