Ingredients
1 C jalapeno (de-seeded and chopped small)
1 medium bell papper (diced)
1/4 C fresh cilantro (chopped)
1/3 C red onion (diced)
3 C mango (diced)
1 large lime
1/8 tsp salt
Instructions

1. In a serving bowl, combine the chopped mango, bell pepper, onion, cilantro, and jalapeño. Drizzle with the juice of one lime.
2. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For the best flavor, let the salsa rest in the refrigerator for 10 minutes or longer.

Notes

Works well with pantry staples (rice, beans) and can be adjusted for spice level and ingredient availability.
You can store the salsa in the refrigerator, covered, for several days, though it's best fresh.
