Ingredients
1/4 C fresh mint, chopped
3 Tbsp fresh lemon juice
1/3 C extra virgin olive oil
2 Tbsp red wine vinegar
1 tsp honey
1/2 tsp salt
Instructions
1. Combine the mint and lemon juice in a small saucepan. Bring to a boil and remove from the heat. Let steep for about 10 minutes.
2. Strain into a large bowl, pressing on the leaves to extract all the liquid. Should have about 3 tablespoons of liquid after straining.
3. Add oil, vinegar, honey, and salt; whisk until combined well.
