These oatmeal crepes are an easy way to add whole grains to your day while providing fiber, protein, and healthy carbohydrates for energy. They are also easy to customize with different fillings and toppings to match your personal taste.

Ingredients
1 C old-fashioned rolled oats
1 pn salt
1 tsp sugar (optional)
2 medium eggs
1 1/4 C milk (or water)
Instructions

1. Put oats into a powerful blender and blend into flour. Note: You can also use store-bought oat flour.
2. Add salt, sugar, eggs, and milk. Blend until smooth.
3. Heat a small non-stick pan over low-medium heat.
4. Pour about 1/4 of the batter into the hot pan. Spread the batter evenly to create a thin crepe. Cook for 1 minute, flip, and cook for another 30 seconds.
5. Repeat.
6. Serve with topping or fillings of choice.

Notes

Optional Sweet Fillings and Toppings: 
Lemon juice, butter, and honey
Fruits: bananas, strawberries, and blueberries
Nuts: crushed/chopped hazelnuts, almonds, and pecans

Cheeses: Gruyère, mozzarella, feta, and Swiss
Vegetables: sautéed mushrooms, fresh spinach, caramelized onions
Herbs: chives, rosemary
