Ingredients
1 sweet potatoes (cubed )
1 red onion (roughly chopped)
1 yellow squash (cubed)
1 zucchini (cubed)
1 can chickpeas, drained and rinsed
1/4 C walnuts (raw)
1/4 C cashews (raw)
1/4 C sunflower seeds (raw)
3/4 C almond milk
1 tsp dried basil
1/2 tsp dried thyme
2 clv garlic
1/2 tsp ground turmeric
1/4 tsp salt
Instructions

1. Preheat oven to 400℉ 
2. Prepare a parchment-lined baking sheet and spread out the vegetables and chickpeas. Roast for about 25 minutes, until soft. 
3. Combine cashews, walnuts, sunflower seeds, almond milk, basil, thyme, garlic, turmeric, and salt in the food processor. Blend until smooth.
4. Serve the vegetables topped with the desired amount of sauce. 

Notes

Walnut sauce can be used to enhance the flavor of other dishes: 
-Serve on meats for a savory topping.
-Spread it on toasted bread or crostini for a quick appetizer.
-Top grain bowls for an extra nutty flavor.
