Eating Well
This colorful and seasonal recipe is full of Vitamin C, antioxidants and protein. The fresh basil leaves and balsamic vinegar provide a punch of flavor, reducing the amount of salt needed for seasoning.

Ingredients
2 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
1/4 tsp salt
1/8 tsp ground pepper
2 C strawberries (hulled and quartered)
2/3 C fresh, small mozzarella cheese pearls
1/4 C basil leaves (loosely packed)
Instructions
- Whisk 2 tablespoons of oil, 1 tablespoon of vinegar, 1/4 teaspoon salt, and 1/8 teaspoon pepper together in a small bowl until fully combined.
- Arrange 2 cups of quartered strawberries and 2/3 cup mozzarella pearls in a large bowl; top with 1/4 cup of basil. Drizzle evenly with oil mixture and serve immediately.
Notes
Strawberries can be cut based on preference. Seasonings or dressings can be included or excluded.
