This creamy whipped feta dip combines tangy feta cheese, Greek yogurt, and roasted sun-dried tomatoes for a flavorful appetizer, perfect for sharing. It's an easy way to incorporate heart-healthy fats with fresh produce or whole grain crackers.

Ingredients
1/3 C sun-dried tomatoes (drained, chopped)
3 Tbsp olive oil
2 tsp lemon zest
1 clv garlic
2 sprigs fresh rosemary
8 oz feta cheese block (drained)
3/4 C plain whole milk Greek yogurt
2 Tbsp olive oil
1 milk of choice (for desired texture, optional)
Instructions
- Preheat oven to 400°F.
- In an oven-safe glass dish, mix sun-dried tomatoes, 3 tablespoons olive oil, lemon zest, garlic, and 1 sprig of rosemary.
- Place dish in oven for about 12 minutes.
- Add the feta cheese and Greek yogurt to the bowl of the food processor.
- Place the lid on the food processor and slowly pour in olive oil while mixing. Stop mixing occasionally to scrape the sides of the processor.
- Once the feta mixture is smooth and creamy, add 1 tablespoon of milk or more until desired texture.
- Evenly spread the whipped feta into a separate shallow oven-safe dish (pie pan, small casserole dish, etc.).
- Place the dish under the broiler for 3-4 minutes, until the feat is warm and slightly bubbles at the edges.
- Remove from oven and top with the roasted mixture, fresh minced rosemary, and black pepper.
Notes
- Optionally, top with chopped nuts or olives as a garnish.
- Serve with low-sodium crackers and vegetables such as carrots, cucumbers, or celery.
